Summer salad series: Hot girl caesar salad with a twist

Hot girl caesar salad with a twist

Ingredients

1 head romaine lettuce

1 cup spicy banana peppers

Homemade caesar dressing

Lots of fresh ground black pepper + fresh Parmigiano-Reggiano cheese (this specific cheese is KEY).

Ingredients for caesar dressing

2 garlic cloves (minced)

2 tbsp fresh lemon juice

1 tsp Dijon mustard

1 cup Greek yogurt (or mayo)

½ cup freshly grated Parmigiano-Reggiano, salt, + pepper

Note: Some people like anchovies, therefore, add 1 tsp anchovy paste (I don’t prefer them, that's why you don't see it added here).

Directions for dressing: Add all ingredients to a food processor or blender and pulse until mixed to the consistency of your preference. Dressing will stay good in the fridge for about a week.

Directions for salad: Chop head of lettuce into bite-sized pieces. Grate Parmigiano-Reggiano cheese (this cheese is superior to grated parmesan you find already done at the store, but if that's all you have, it will totally work). Top lettuce with banana peppers, black pepper, cheese + dressing. Sometimes I like to add cherry tomatoes as well, so feel free to add. Toss salad + serve as meal w/ a protein or as a side dish!
