Perfect for a crowd or keep them for yourself — these caramelized onion + goat cheese tarts are easy to make and scream fall get together or even Friendsgiving.

Carmelized Onion + Goat Cheese Tarts

Ingredients

5 white onions (peeled + thinly sliced)

2 sheets puff pastry

5 oz. goat cheese

4 tbsp {good} olive oil

Balsamic glaze, fresh thyme + sea salt

Directions: Preheat oven to 375 degrees. Remove puff pastry from fridge. Peel and slice onions thin. In a large skillet over medium-high heat, add olive oil. Once hot, add only half of your onions. Cook ~4 minutes until they start to soften, then add other half of onions. Cook until brown, about 8 minutes. Reduce heat to medium-low + continue cooking onions down ~15 more minutes until they become soft + brown in color. Stir occasionally.

Prep your puff pastry: Remove pastry from paper lining out of the box. Line 2 baking sheets with parchment paper. Cut pastry sheets into 10 equal rectangles.

Top each pastry with ~1.5 tbsp of cooked onions- make sure to leave border around edges. Bake for 10 minutes.

Remove pan from oven, then top onions with crumbled goat cheese + fresh thyme. Place back in oven + bake additional 17 minutes until golden brown + puffy. Remove from oven + drizzle with sea salt and balsamic glaze. Serve as is or cut into small pieces for a larger crowd. This is perfect for hosting this fall!
